Sun dried tomatoes (also known as dehydrated tomatoes or sun-dried tomatoes) are a unique product leftover from tomato processing. The process involves spreading tomatoes on a wooden board under the sun to dry. This naturally tenderizes the tomatoes and gives them a unique flavor.

Turkey and Tunisia are among the best producers of dried tomatoes in the world.
